Pre-bake your fries in small batches at 150ºC for about five minutes.
Drain the fries well.
Increase the temperature of the fat to about 190ºC.
Fry the chips and mini spring rolls for about two minutes until nicely golden brown.

Serve the fries with the mini spring rolls, Hela Sweet Chili sauce and Wasabi sauce.
Then top it with the fried onions.
