Preheat the oven to 175 degrees. Cut courgette, aubergine, tomatoes, red onions, and garlic. Also dice pepper. Score and finely chop Italian herbs.
Heat olive oil in an ovenproof pan, braise onion and garlic. Add Italian herbs and braise briefly. Add pepper and braise for 5 minutes. Deglaze with half the meal sauce and simmer for 10 minutes.
Remove the pan from the heat and arrange tomato, courgette and aubergine on top like a fan. Spread the rest of the meal sauce on top and cover with baking paper. Bake for about 35 minutes in the preheated oven.
Remove from the oven, remove the baking paper and grate Parmesan cheese on top. Serve with freshly baked bread.
